Old-fashioned, wood-smoked barbecue has found its way to New Town Key West with the opening of Daddy Bones at 2502 N. Roosevelt Blvd.

Owner and restaurateur Jon Osburn, who has been visiting the Southernmost City since childhood, decided there was a market niche open for barbecue and set up shop.

“If we wouldn't eat it and aren't proud of it, we wouldn’t serve it,” Osburn said. “You want to use quality meat, quality rub; your pit has to be 100 percent wood fire.”

Osburn, who owns two barbecue restaurants on Martha's Vineyard, brought in a pit master with nearly two decades of experience to run his kitchen.

The menu runs the gamut of American barbecue favorites — Texas-style beef brisket, pulled pork, beef tri-tip, smoked chicken, dry-rubbed pork spareribs and Kansas City baby back ribs.

Sides include coleslaw, baked beans, roasted garlic mashed potatoes, mac and cheese, cornbread and Texas toast.

Osburn pointed to the pulled pork as a particularly hot seller. A pulled-pork sandwich served on a homemade roll with a choice of one side is $8.95, and the platter, served with two sides, is $11.95.

Daddy Bones is open 11 a.m. to 9 p.m. every day except Tuesday. You can dine in, take out or get delivery. The phone number is 295-7427. Daddy Bones is also available for catering.
