<li> 5 medium vine ripe tomatoes (diced)
<li> 2 tbsp. chopped fresh cilantro leaves
<li> 1 tsp. fresh oregano
<li> 1 tsp. cumin
<li> 1 medium red onion, diced
<li> 1 green, red and yellow pepper (seeded & diced)
<li> 1 tsp. brown sugar
<li> 2 oz. olive oil
<li> 4 oz. cider vinegar
<li> Salt & black pepper to taste
<li> 1 fresh jalapeno pepper (seeded & diced)
<li> Juice of 2 key limes or 2 Tbsp. Key Lime Juice
Mix together and chill in refrigerator for 1 hour.</p><p><b>Dolphin (or any other firm fish):</b>
<li> 1 lb of fresh dolphin filets
Brush with olive oil and cook over medium high heat for 5-8 min. each side or until fish flakes (do not overcook). Remove from grill and top with fresh chilled salsa. </p><p>Serve with black beans and rice.
