< b>Salsa:

  • 5 medium vine ripe tomatoes (diced)
  • 2 tbsp. chopped fresh cilantro leaves
  • 1 tsp. fresh oregano
  • 1 tsp. cumin
  • 1 medium red onion, diced
  • 1 green, red and yellow pepper (seeded & diced)
  • 1 tsp. brown sugar
  • 2 oz. olive oil
  • 4 oz. cider vinegar
  • Salt & black pepper to taste
  • 1 fresh jalapeno pepper (seeded & diced)
  • Juice of 2 key limes or 2 Tbsp. Key Lime Juice Mix together and chill in refrigerator for 1 hour.

    Dolphin (or any other firm fish):

  • 1 lb of fresh dolphin filets Brush with olive oil and cook over medium high heat for 5-8 min. each side or until fish flakes (do not overcook). Remove from grill and top with fresh chilled salsa.

    Serve with black beans and rice.
